A delicious medley of almonds, cashews, and hazelnuts roasted, caramelized, and covered with dark chocolate. They are made even more flavorful with a touch of cardamom, cinnamon, saffron, and ground coffee.
Panning Perfection
Everyone in the Burdick factory loves nut days. The ambrosial aroma of warmed cashews, hazelnuts or almonds and the heady golden scent of caramelizing sugar wafting through our production room. What is not to love?
Lightly warmed nuts are added to the enormous bowl of our very traditional confectioner’s panner, then slowly turned over an open flame, constantly monitored while spices and sugar are painstakingly sprinkled in. The warm bowl makes slow revolutions, caramelizing the nuts and sugar into a simple irresistible confection as the exquisite scent rises. After a full day of resting and cooling, the caramelized nuts return to motion, tumbling in a cold panning bowl, slowing turning, as ladlefuls of warm chocolate are drizzled in. A light dusting of sugar or cocoa powder completes the transformation. Heavenly.
